3 Ways with Canned Beans
Black-Eyed Pea Salad
Toss rinsed black-eyed peas, cut-up plum tomatoes, sliced red onion and mixed salad greens with a Dijon vinaigrette. Sprinkle with crumbled crisp bacon and toasted pecans.
Skillet Pork & Beans
Fry pork chops; remove to a plate. Add rinsed white beans and canned diced tomatoes with green chiles to pan. Cover and simmer 5 minutes; add pork chops.
Mash rinsed red kidney beans from a 28-oz can. Mix with a beaten egg, 1/4 cup dried bread crumbs and 1 tsp Italian seasoning; make 4 patties. Panfry until hot and crusty. Top with heated marinara sauce and grated Parmesan.
