How to Make Dairy‐Free Mac and Cheese
There is nothing quite as comforting as macaroni and cheese. If you are lactose intolerant, vegan, or have another issue with dairy, you may miss the creamy taste of macaroni and cheese. Cooking Dairy-Free Mac and Cheese with Butternut Squash

You will need the following ingredients: one butternut squash; four cloves of garlic; a tablespoon of coconut oil; a cup and a half of cooked butter beans (1 can); three-quarters of a cup of nutritional yeast flakes; a teaspoon of Dijon mustard; one and a half teaspoons of sea salt; two teaspoons of paprika; two tablespoons of olive oil; a teaspoon of apple cider vinegar; four cups of your favorite gluten-free macaroni; and two or three cups of almond or soy milk.
Put together your ingredients for the topping.For the crumble topping, you will need one cup of sunflower seeds; a tablespoon of coconut oil; two tablespoons of nutritional yeast; half a teaspoon of sea salt; a quarter teaspoon of garlic powder; and a quarter teaspoon of paprika. Using these ingredients, make your mac and cheese topping.
Prepare your ingredients.Prior to making the sauce and baking the mac and cheese, you will need to prepare each of the individual ingredients. In particular, you will need to prepare the butternut squash, pasta, and the crumble topping:
- Skin, seed, and cube the butternut squash.
- Bake the butternut squash with the garlic and olive oil for fifteen to twenty minutes at 400 Fahrenheit (200 Celsius).
- Toast the sunflower seeds for three to five minutes. Then, put them in a food processor with all of the other crumble topping ingredients.
- Prepare the pasta following the instructions on the package.
Cook the mac and cheese.Use the following instructions to prepare your sauce and then bake your mac and cheese:
- Put the roasted squash in a blender with all of the ingredients except the soy or almond milk. Blend the squash and slowly add some milk at the end until you get a nice creamy consistency.
- Pour the mixture over the macaroni pasta.
- Turn the oven down to 325 Fahrenheit (160 C). Put the pasta and sauce in a casserole dish, add the crumble topping and bake it for twenty minutes.
Making Dairy-Free Mac and Cheese with Potatoes and Carrots
Find fresh Yukon gold potatoes.Yukon gold potatoes are the heart of this delicious dairy-free mac and cheese, so it is best to find fresh potatoes at your local farmer’s market or grocery store. Yukon gold potatoes are early-bearing so you should be able to pick them up early in the season. They are available year round but taste best when they have been recently harvested, so check your local farmer’s market for fresh potatoes. Choose fresh potatoes that are golden and have no deep bruises or cuts.
- You will need one cup of potatoes for this recipe.
Gather your ingredients.If you want to make a vegan or dairy-free mac and cheese but don’t have any nutritional yeast, this recipe may do the trick. You will need the following ingredients: two cups of elbow pasta; one cup of chopped Yukon gold potatoes; a quarter cup of chopped carrots; a third of a cup of chopped onion; three tablespoons of olive oil; three tablespoons of all-purpose flour; half a cup of non-dairy milk; two teaspoons of sea salt; a quarter teaspoon of minced garlic; a quarter teaspoon of Dijon mustard; a tablespoon of lemon juice; a quarter teaspoon of black pepper.
Put together your topping ingredients.For the topping, you will need two shredded slices of whole wheat bread; a quarter teaspoon of paprika; and two teaspoons of olive oil. Using these ingredients, make your mac and cheese topping.
Prepare your individual ingredients.Get ready for cooking by preheating your oven and preparing the pasta as well as the ingredients for the sauce. Use the following instructions for the first stage of this recipe:
- Turn on the oven at 350 degrees Fahrenheit (176 C).
- Cook the potatoes, carrots, onion and a cup of water in a medium saucepan. Bring the water to a boil and simmer for fifteen minutes or until vegetables are done.

- Cook the olive oil in a saucepan and gradually add the non-dairy milk and the flour until thickened. This should take five minutes.

- Pour the pasta and sauce into a baking dish, thrown on the breadcrumb mixture, and bake for thirty minutes.
Replacing the Dairy with Vegan Cheese and Non-Dairy Milk
Cook macaroni and cheese with vegan Parmesan cheese.This creamy mac and cheese makes a great weeknight meal and can be served with kale. You will need the following ingredients: one head of roasted garlic; twelve ounces of gluten free penne; four tablespoons of olive oil; four cloves of minced garlic; four and a half tablespoons of arrowroot starch; two cups of almond milk; five tablespoons of nutritional yeast; half a cup of vegan Parmesan cheese; and sea salt to taste. Using these ingredients, make your mac and cheese:
- Roast your head of garlic in the oven at 400 degrees Fahrenheit (200 C) for one hour.
- Cook the pasta for eight to ten minutes, following the instructions on the package.
- To prepare the sauce, saute the minced garlic for a couple minutes and then add the arrowroot starch. Slowly add the almond milk until it starts to look clumpy. Add the salt, pepper, nutritional yeast, and vegan Parmesan cheese.
- Cook the sauce in the skillet for a few minutes.
- Add the cooked pasta to the sauce and top with more vegan Parmesan cheese.
Replace the cheese packet with vegan cheese.When you buy your conventional macaroni and cheese product, it will come with a packet of conventional cheese. Discard this cheese and replace it with vegan cheese. Alongside non-dairy milk, this will transform your conventional package of macaroni and cheese into a dairy-free recipe.
- If you are working with a traditional mac and cheese recipe, you can simply substitute with vegan cheese and an alternative milk.
- Try using a vegan Parmesan cheese.
- Cheesy vegan white cheddar style cheese is known to melt well. You can buy it online or at your local health food store.
- Try Sheese melty smoked cheddar. This vegan cheese is a great vegan cheese that also melts well for pizza or, indeed, macaroni and cheese.
- If you have a friend, family member or roommate who enjoys conventional macaroni and cheese, you can give them the cheese packet.
Substitute non-dairy for cow milk.When you follow the directions on your box of conventional macaroni and cheese, it will call for cow milk. At this point in the recipe, replace the cow milk with a non-diary option such as almond milk, soy milk, or rice milk.
- A cup of soy milk has six grams of protein, twelve grams of carbohydrates, and four grams of fat. It contains one hundred and five calories.
- A cup of almond milk has a gram of fiber and protein, two to three grams of fat, and around 40 calories.
- A cup of rice milk has twenty five carbohydrates, two grams of fat, and a hundred and twenty calories in total.
Replace the milk with pasta water.If you want to make a dairy-free macaroni and cheese but only have a little bit of vegan cheese and a box of conventional mac and cheese but no non-dairy milk, you can still make mac and cheese. If you are in this situation, simply replace the milk with the starchy water from cooking your pasta. It will help the pasta to stick to the vegan cheese.
- Instead of throwing out the water when you drain your pasta, catch the water in a pot.
- When the recipe calls for milk, simply use the starchy water instead.
